Cincinnati, Ohio — New and old collide deliciously at Wyoming Meat Market, where owner Shelbi Nation is determined to make it a fun and welcoming space that’s serious about quality. Nation became the fourth owner of the market in 2021 after spending time apprenticing and learning the craft of butchery from previous owner Jim Gelhausen, who ran the business for more than 40 years. Since then, she’s taken a good look at what’s made the market successful for more than 100 years, while adding her own culinary touches.
Wyoming Meat Market takes pride in being a whole-animal butchery and ensuring that no part of the animal goes unused. “There are two aspects of whole-animal butchery: the sourcing aspect and the quality and taste of the meat,” Nation says. “Both improve when you buy whole animals.”
Nation says she enjoys working directly with the farmers she sources meat from and finding new ways to use different cuts. “One cut isn’t just the do-all, be-all,” she says. “I think that’s the biggest thing and why it’s important to have a relationship with your butcher.”
Along with a variety of freshly cut meats, customers will also find a fully stocked European-style wine bar that’s been a new addition under Nation’s ownership. The market also offers a medley of housemade prepared foods, like deli salads, grab-and-go dinners, and a rotating menu of daily sandwiches.
Nation’s goal for the space is to make it a “funky, creative, and artistic” spot that’s constantly evolving, with quality being of utmost importance at every step of the way.
