Strawberry Dressings
Creamy Strawberry Dressing
Handful fresh strawberries, stemmed and quartered
Dash of sugar
4 oz soft goat cheese at room temp
¼ C buttermilk
2 tsp white wine vinegar
1 tsp Dijon mustard
1 tsp minced fresh thyme
1 tsp minced fresh parsley
pinch lemon zest
salt and pepper to taste
Take quartered strawberries and add them to a bowl with a dash of sugar. Mash the strawberries and sugar, then allow the strawberries to soak in the sugar for 30 minutes.
Combine softened goat cheese, buttermilk, vinegar, Dijon, thyme, parsley, lemon zest, salt, and pepper.
Add strawberries to goat cheese mixture. If you would like a thinner dressing, add a tablespoon of buttermilk at a time until you have your desired thickness.
Strawberry Ginger Vinaigrette
Handful fresh strawberries, stemmed and quartered
Pinch of sugar
1 sm clove garlic
2-3 pinches of salt
1/3-1/2 C cider vinegar
2 tsp grated or minced ginger
1 shallot minced
1 tsp Dijon mustard (optional)
salt and pepper to taste
Take quartered strawberries and add them to a bowl with a dash of sugar. Mash the strawberries and sugar, then allow the strawberries to soak in the sugar for 30 minutes.
Make a paste with garlic and salt by chopping and smashing the garlic on a cutting board and adding salt. Set aside.
Combine cider vinegar, ginger, shallot, Dijon mustard, salt, and pepper in a mixing bowl. Add strawberries and garlic paste, then add slowly and whisk in the olive oil.
Parmesan Strawberry Vinaigrette

1/3 C balsamic vinegar
3 T grated Parmesan
1 tsp fennel seeds
1 shallot minced
1 clove garlic minced
salt and pepper to taste
1 C olive oil
Take quartered strawberries and add them to a bowl with a dash of sugar. Mash the strawberries and sugar, then allow the strawberries to soak in the sugar for 30 minutes.
Combine vinegar, Parmesan, fennel, shallot, garlic, salt, and pepper. Add strawberries to the balsamic vinegar mixture, then add slowly and whisk in the olive oil.
