Tomato Butter

makes about 1 cup
Something new, but keeping it simple! Just pop some seeded tomatoes in the oven and combine with butter for a new twist. Dollop onto grilled fish, cooked rice, or toast.
10 cherry tomatoes, halved, seeds removed
1 tsp. salt (or more to taste)
½ cup unsalted butter, softened
Broil cherry tomato halves until the skins blister and juices are released. After allowing them to cool, puree them in a food processor until coarse. Then stir tomatoes and salt into softened butter. Dollop onto grilled fish, cooked rice, or crostini. Keeps, refrigerated, for 1 week.
