Roasted Cauliflower Pizza
A rich and simple white-sauce pizza that can make anyone a lover of cauliflower!
makes 12 servings
For the white sauce:
½ cup whole milk
2 tsp. butter
2 tsp. flour
Salt
For the pizza:
1 recipe pizza dough
½ head cauliflower
1 cup grated Parmesan
1 cup fresh bread crumbs
Olive oil for drizzling
Salt and pepper to taste
Chopped parsley for garnish
In a small saucepan, melt butter over medium heat. Once butter has melted, whisk in flour to make a paste. While whisking, slowly pour in milk, whisking constantly until sauce thickens to a glue-like consistency. Season with salt to taste.
Preheat oven to 500°. Press dough into a rimmed round or rectangular baking sheet. Brush dough with olive oil and parbake for 5 minutes. In a food processor, pulse cauliflower until it’s crumbled like confetti (about 2½ cups). Remove crust from oven and spread white sauce evenly over, then top with cauliflower, Parmesan, and bread crumbs. Bake 10 minutes, or until cauliflower just begins to brown. Remove from oven and finish with olive oil, salt, pepper, and parsley.
