Apple Chips
Makes about 24 slices
An easy and healthy snack and a great little gift for kids.
2 large apples (any variety)
4 C water
1 ⁄ 2 C lemon juice
Preheat oven to 200 degrees; place two racks in the middle of the oven. In a large bowl combine water and lemon juice. Slice the apples 1 ⁄ 8-inch thick and transfer them to the bowl of lemon water. While the apples soak for 20 minutes, line two large sheet pans with parchment paper. Remove the apple slices from the lemon water and pat dry. Line the sheet pan with one layer of apple slices fit closely together and bake for a total of 2–3 hours. After the first hour flip the slices, then continue baking for 1–2 hours, depending on how crisp you want the chips. Let cool to room temperature before packing in an airtight container. Keep apple slices in the refrigerator for up to 1 month.
