Potato Latkes
makes 8–10 latkes
1 lb. russet potatoes, peeled and boiled until tender
2 large eggs
2 Tbsp. all-purpose flour
1/4 tsp. baking powder
1 tsp. salt
½ tsp. pepper
2 Tbsp. olive oil
Mash boiled potatoes with eggs, flour, baking powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. To make latkes, take a small handful (about ¼ cup) and flatten. Place carefully into the skillet and fry to a golden brown, flip, and repeat. Place on a warm plate to serve with applesauce or your favorite sauce.
