Cantaloupe & Cucumber Salad

SERVES 3-4
1 Tbsp. honey
2 Tbsp. fresh lime juice
½ cup plain yogurt
1 cantaloupe, peeled, seeded, and roughly chopped
1 large cucumber, peeled, seeded (if desired), and chopped
2 tsp. chopped fresh mint leaves
1/3 cup chopped roasted pistachios
Salt to taste
In a serving bowl, whisk together honey and lime juice until blended; whisk in yogurt. Add cantaloupe, cucumber, and mint; toss to combine. Top with pistachios; add salt to taste.
