Pear Salsa
A refreshing fall salad —this is a great way to use pears that are in season but a bit unripe.
serves 4–6
¼ cup fresh lime juice
¼ cup water
1 Tbsp. honey
¼ tsp. salt
4 pears (not yet ripe), diced into ¼-in. cubes
1 red onion, thinly sliced
1 jalapeño pepper, finely chopped
¼ cup minced cilantro leaves and stems
¼ cup minced mint leaves
In a small bowl, whisk together the lime juice, water, honey, and salt until the honey dissolves. Set aside.
In a large bowl, add pears, onion, jalapeño, and herbs and toss to combine. When ready to serve, add the honey-lime dressing, mixing well to evenly coat. Serve immediately.
Tip: Make only what you can eat at one sitting. This salsa doesn’t make good leftovers; the pears will break down overnight in the fridge.
