Edible Radio: Rethinking Hunger
This is the second Signature Section produced by Edible Communities with a focus on hunger. The feature story of this special section is about rethinking hunger, and more specifically, a shift toward “nutrition insecurity”, rather “food insecurity” alone. The story features Michel Nischan, a four-time James Beard Award-winning chef and the founder of Wholesome Wave, along with Dr. Lois Ellen Frank.
When experts in hunger talk about hunger in terms of food security, it drives a cultural conversation that can lead food banks to be well-stocked, but it’s often with ultra-processed food. And, technically, that can provide people enough calories to stave off hunger, but what about their needs for nutrition? We believe hunger isn’t just about getting people food. It’s about getting people the right kind of food.
