Bimuelos with Honey

Sephardic Jews make these donuts fried in oil to celebrate the Hannukah oil miracle. Remember to proof the yeast with warm water; if the water is too hot it will kill the yeast.

2 cups water
3 tsp sugar
1 pkg active dry yeast
½ tsp salt
1 Tbs oil, plus oil to fry
3 ¼ cups flour
honey

Heat 1 cup of water until warm to the touch (not hot). Add 1 tsp sugar then mix in yeast – allow to sit 15 minutes until bubbly. Pour proofed yeast into a large bowl, then add 1 cup water, 2 teaspoons sugar, salt, and 1 tablespoon oil. Add flour gradually and slowly combine until smooth. (Dough will be wet.) Cover and let rise in a warm spot for 1 hour.

Add enough oil to a pot or deep pan so there are 2-3 inches of oil to cook and heat to 370 degrees. Line a cookie sheet with paper towels and add water to a small bowl. Moisten your hands with the water and pull a small handful of dough (about ¼ cup) from the large bowl. For the dough into a rough ball and use your them to poke a hole through the center. Drop the donut carefully into the oil and fry one side until golden brown. Flip donut and fry until golden brown. Remove from the oil with a slotted spoon and place on paper towels to drain. Allow to cool briefly then serve warm with a drizzle of honey.
